Biscottis are the perfect little treat to enjoy with your coffee, tea or hot chocolate. Dipping the crispy biscottis in your drink of choice is a must. This recipe is gluten free and delicious!

Preheat the oven to 340F or 170C.
In a bowl, add the wet ingredients together. Whisk well, until all the ingredients come together into a smooth liquid.
Add the almonds, whole, and with the peel on. With a spatula, incorporate them into the liquid.
Add the dry ingredients and with a spatula mix together until you have a thick paste. It will be a litte sticky.
Cut the dough into two parts, and shape each part into a long, flat, stripe.
Bake at 340F or 170C for 30 minutes until is no longer soft to the touch. Then take them out of the oven and let them cool down on the tray for 20 minutes.
With a serrated knife (bread knife) cut diagonally, into 1.5 - 2 inches (4 to 5 cm) long biscotti. Make sure to use a good knife so the biscottis don't fall apart.
Place the biscotti on the baking tray, with the cut side facing down, and bake for 5-10 more minutes, or until golden. The second baking will make them crisp and tasty.
