Add all ingredients for the pancakes to a blender and blend until smooth.
Put a non-stick pan over medium-high heat and add coconut oil to fry the pancakes. Measure 1/4 cup of pancake batter to make mini pancakes.
Pour the pancake batter into the hot pan and add banana slices on top. Flip the pancake after 2 minutes and fry on the other side. Make sure not to burn the banana.
Repeat until all pancakes are ready. Top with maple syrup and peanut butter.
