Browse ProgramsPreheat your oven to 350°F (175°C) and lightly grease a mini loaf pan (8 cavities, approx. 3.5 x 2.3 x 1.4 inches each).
In a medium bowl, whisk together the coconut milk, date syrup, lemon zest, vanilla extract, almond extract, and apple cider vinegar until smooth.
In a larger bowl, whisk together the almond flour, oat flour, flaxseed meal, baking soda, and salt.
Pour the wet ingredients into the dry ingredients and whisk until you have a smooth, lump-free batter.
Pour the batter into the mini loaf pan, filling each cavity about halfway.
In a small bowl, mix the sliced almonds with date syrup and cinnamon. Sprinkle generously over each tartlet.
Bake for 20–30 minutes, or until the tops are lightly golden and a toothpick inserted comes out clean.
Let the tartlets cool completely on a wire rack. Dust with powdered sugar if desired, and enjoy.
