Add the diced apple, maple syrup, cinnamon, lemon juice, and water to a small saucepan. Cook over medium heat for about 4–5 minutes, stirring occasionally, until the apple begins to soften.
Meanwhile, add the oats, chia seeds, soy milk, vanilla, and date to a blender. Blend until smooth.
Pour the oats into a bowl if eating immediately, or into a jar if preparing them for later. Spoon the cinnamon apples over the top and finish with peanut butter and hemp seeds.
For a warm breakfast, gently heat the blended oats in a saucepan or microwave, stirring in an extra splash of soy milk if they become too thick. For overnight oats, cover and refrigerate, then enjoy chilled or warmed the next day.
