Start the ProgramPreheat the oven to 400°F | 200°C. Line a baking tray and a baking dish with parchment paper.
In a small bowl mix all the ingredients for the cauliflower coating. Add the cauliflower and coat well.
Transfer the cauliflower to a baking dish and bake for 20 minutes.
20 minPeel the onion and cut the garlic head on the flat side. The garlic head has to stay together.
Place the tomatoes, peeled onion, and garlic on the baking tray. Season with olive oil and salt. Roast for 20 minutes as well.
10 minOnce the veggies are done transfer the tomatoes, onion, and garlic (peel removed) to a high-speed blender. Add the rest of the ingredients for the sauce and blend until smooth.
Transfer the cauliflower, sauce, and chickpeas to a pan and let simmer for 2-3 minutes.
2 minTop with fresh basil and cashews. Serve with bread or rice.
