Get Early AccessCrumble the tofu with your hands into a medium size bowl.
Mash the avocado into the same bowl and combine with the tofu.
Stir in the finely chopped basil, cilantro and jalapeño. As well as all spices nutritional yeast, garlic powder, salt, and pepper. Taste and adjust the seasoning.
Divide the filling between two slices of bread. Add the microgreens and close with the remaining slices.
Heat a skillet over medium heat and add the olive oil. Toast the sandwiches for about 2–3 minutes per side, pressing gently, until the bread is golden and the filling is warmed through. Slice and serve.
