Get Early AccessSoak the cashews in hot water for 10 minutes.
Heat the olive oil in a large skillet over medium heat. Add the diced shallot and sauté for 3–4 minutes, until soft and translucent.
Add the minced garlic and Italian herbs. Cook for approximately 30 seconds, stirring frequently, until fragrant.
Add the tomato paste and cook for 1–2 minutes, stirring it into the shallot and garlic. This helps deepen its flavor.
Stir in the chopped sun-dried tomatoes and the white beans, including their liquid. Bring everything to a gentle simmer.
Stir in the chopped kale and season with salt and black pepper. Simmer for 8–10 minutes, stirring occasionally, until the kale is tender and the sauce has slightly thickened
Add the cashews, water, nutritional yeast, and garlic powder to a high-speed blender. Blend until completely smooth and creamy.
Reduce the heat to low and stir in the cashew cream. Gently cook for another 2–3 minutes. If the sauce becomes too thick, add a splash of water or vegetable broth.
Add the lemon juice and adjust the seasoning to taste. Top with plenty of fresh basil and a drizzle of chili oil for a little heat.
