In a large pot, heat the olive oil over medium heat.
Add the onions, celery root, and carrots. Sauté for about 2 minutes or until the onions are translucent.
Introduce the minced garlic and spices (thyme, turmeric, smoked paprika, and onion powder) to the pot. Stir well to ensure the vegetables are well coated.
Mix in the zucchini, soaked lentils, and potatoes, ensuring a uniform blend.
Stir in the tomato paste and tomato puree, followed by the vegetable stock.
Cover the pot with a lid and let the soup simmer until the lentils and potatoes are tender.
Season with salt and pepper according to your taste. Serve hot.
