Get Early AccessAdd the tofu, coconut oil, olive oil, lemon juice and remaining seasonings to a food processor or high-speed blender. If using a blender, place any liquid ingredients closest to the blades.
Blend until creamy and completely smooth, stopping to scrape down the sides as needed. When using a blender, start on low and gradually increase the speed, using the tamper if necessary.
Add the chopped scallions and fresh herbs. Pulse briefly in the food processor, or fold them into the finished spread by hand if using a blender.
Taste and adjust the salt, acidity and herbs to your liking.
Transfer the cream cheese to an airtight container and refrigerate for 2–4 hours. The coconut oil will help it firm up as it chills.
